Meet Our Event Staff and Instructors


Korrin Fotheringham

Korrin is founder and Registered Dietitian Nutritionist of Northwood Nutrition in downtown Spokane. She completed her training in whole foods nutrition from Bastyr University where she earned a Masters Degree and completed a Dietetic Internship. Her background supports an integrative and functional medicine approach to nutrition where Korrin works closely with other healthcare practitioners to deliver individualized and evidence based nutrition interventions. Her specialty areas include eating disorders, food allergies and intolerances, autoimmune conditions such as Celiac disease and Crohn’s/Colitis as well as digestive issues like Irritable Bowel Syndrome. Korrin especially loves to work with children and their families to develop a foundation of balanced eating habits. What sets Korrin apart from other dietitians is her ability to talk about nutrients in terms of specific foods and her love for creating and sharing delicious whole foods recipes. Korrin has taught several classes here, including Anti-Inflammatory cooking, Prebiotic/Probiotic cooking, and much more!


Chef Charmaine Vierra

Charmaine is a 14-year double-negative breast cancer survivor. She believes the nutrients healthy foods contain have a positive and impactful influence on the quality of her life. Charmaine Vierra enjoys creating living brushstrokes of flavor in the kitchen. She is an author and creator of the EAT MORE RAINBOWS program for children that help children build confidence with plant-based culinary skills and healthy choices. She has instructed cooking classes around the world.

Charmaine’s educational background includes a BA in Sports Sciences, Master of Public Administration, training through the Physicians Committee for Responsible Medicine as a Food for Life Nutrition & Cooking Class Instructor, Stanford Prevention Research Center as a Stanford Healthy Lifestyle Program® Facilitator, as well as a CHIP® Facilitator. She is a Certified Massage Practitioner. Her passion in raw food led her to pursue hands-on training at Living Light Culinary Arts Institute, the world’s premier organic raw vegan chef training school, she graduated as an Associate Chef and Instructor. Currently, Charmaine is completing a Ph.D. in Health Education and Promotion. Charmaine has taught classes on Detoxing Smoothies and Juices at My Fresh Basket.


Chef Eva Roberts

Eva H. Roberts is the co-founder and owner of the Spokane area bakery, Just American Desserts.  Her experience and expertise derives from a life-long interest in the culinary arts.  Growing up in an Air Force family allowed her the opportunity to be exposed to the world of cooking across the globe.  Returning to Spokane in the late nineteen-seventies, she began her career as the head Pastry Chef for the historic Spokane restaurant, Patsy Clark’s.  Although not professionally trained, Eva quickly became well known for her quality homemade confections.  This newfound recognition led Eva, her sister, and mother to open the doors of Just American Desserts in 1986.  Thirty-one years later the Spokane staple is stronger than ever, using only the freshest and finest ingredients, never compromising with modern shortcuts.  This nod to the past has earned Just American Desserts many awards and accolades, including the 2009 AGORA Award for Small Business of the Year.  Despite her great success, Eva can still be found daily at the bakery’s flagship location, helping create what residents of the Inland Northwest have come to depend on.   Eva remains dedicated to the Spokane community and is also involved in various organizations and entities across the region. In addition, she has branched out into education and teaches a variety of local hands-on classes to help pass along her knowledge and expertise to the everyday gourmet.  Eva has taught several baking classes here at My Fresh Basket.
